Costers Del Priorat, Blanc de Pissares 2016

Descriptions:

Varieties: 60% Garnacha Blanca, 30% Macabeo and 10% Pedro Ximenez.

Made in small quantities, the only white wine in the range of Costers del Priorat comes from selected parcels in the vineyards of Sant Martí and Mas Alsera. The nose shows the marked personality of the Priorat’s White Grenache, with its characteristic notes of white flowers, herbs and fruit skin. The palate is unctuous, with citrus and smoky flavours. The finish is very persistent and offers a surprising and lovely sweet touch. It is the warm and charming footprint of the Pedro Ximenez variety, an interesting balance with a fresh and genuine minerality.

Costers Del Priorat, Pissarres 2015

Descriptions:

60% Garnacha Tinta and 40% Samsó (Carignan or Mazuelo). This wine concentrates the colours and aromatic sensations you find walking along any path in Priorat. Pissarres is the true mirror of the region. Dark, deep red. The palate is complex. It has ripe fruit, influences of the Mediterranean brushwood and a sharp, cold note, which is the characteristic mark of the llicorella slate soils’ extreme minerality. The wine is made in stainless steel tanks of 3,000 and 5,000 litres, and a small part in cement vats. The varieties are vinified separately to get the maximum expression of each grape. The aging is carried out for 12 months in French oak barrels of 225 and 500 litres. The malolactic fermentation occurs spontaneously within the barrels.

Assyrtiko by Gaia Wild Ferment 2016

Descriptions:

Santorini PDO (Protected Designation of Origin), Greece was formed by a volcanic eruption, creating a crescent of land around a deep central lagoon, known as caldera. The stunning landscape draws hoardes of tourists for the sunsets, but the viticulture is also extraordinary.

Vines are trained round, in a basket shape, allowing the grapes to hang down in the centre, protected from the scorching sun and fierce winds by the canopy of leaves. Mineral rich volcanic soil are disease-free with no need to spray.

Gaia’s Assyrtiko Wild Ferment is produced by letting a combination of small 1,000 litre Inox tanks and 225 litre French barriques ferment on its own using native yeasts. Because of the unpredictability of using wild yeast, the vinification will occur differently in each tank or barrel. The winemaker then chooses only the best from each tank and barrel for the final blend, creating a wine that allows Assyrtiko to reach its full potential and level of enjoyment.

Domaine du Chardonnay Chablis Premier Cru Vaillons 2015

Descriptions:

In 1987 Etienne Boileau, Christian Simon and William Nahan had a vision to join their vineyards and expertise together to create Domaine du Chardonnay. With 38 hectares of estate vineyards (9.5 Petit Chablis/18.5 Chablis/9.0 Chablis 1er Cru) they are hands on strictly controlling every aspect of the process from the vineyards to the glass.

Millions of years ago, the area around what’s now the small town of Chablis was covered by the sea. In the Jurassic era, the sediment-enriched clay of the region began to form, and it’s the clay that gives Chablis wine it’s unique elegance, freshness and complexity.
