Romate Oloroso Old & Plus Sherry
A limited amount of barrels hidden in the centre of Bodega Romate’s cellars holds the oldest wines. This Oloroso is over 30 years old and is made from soleras that are over 200 years old. These casks were set aside by the owner’s ancestors for the family’s private consumption.
Nose Notes: Deep and vividly fragrant. Lots of juicy plums, dates an dried figs. Chocolate bars with macadamia nuts and walnuts. Hints of exotic woods and polished furniture, well integrated with some toast and a soft veil of smoke. Big leathery notes as well.
Mouth Notes: Intense, but not a heavy weight. Bright and crisp, with some glycerine which makes it seem a little rounder. Some citrus. Toffee and chocolate. Technically dry of course, but no astringent whatsoever. All quite balanced. It’s acidic, salty and nutty, but nothing in excess. Long, dry, nutty finish with a light bitter edge.
