“Rock juice. That’s what this wild ferment Chénas is like, living up to its Quartz name. Dominique Piron is the 14th generation winemaker at the family estate. Woodsy, spice notes open, with subtle earthy smoke, dark florals, wild black plum, black cherry, black raspberry laid across a textured stream bed of stones. Tannins are slightly grippy and acids are bright and shining through to a fine peppery finish. Quite structured, this would hold up to roasted pork tenderloin or grilled sausages.”
