Thalassitis Santorini Assyritko by Gai’a 2017

Descriptions:

The Greek Grape: Assyritko

Most prominently made on Santorini, the Greek island famed for its stark white architecture and blue-domed roofs, Assyrtiko is a mineral-driven, full-bodied white wine that’s incredibly ageworthy. It picks up its salty tang from volcanic soil and Mediterranean breezes, though vines are protected from harsh winds by a unique basket vine training method called kouloura. “Its bright citrus flavors, notes of sea spray and herbaceous undertones work perfectly with Mediterranean [cuisine],” says Haunah Klein, head sommelier at Boulud Sud Miami.

Monograph Assyrtiko 2016 (White Wine)

Gaia’s main aim is to present the potential of indigenous Greek grape varietals to wine enthusiasts worldwide.

Meaning of Monograph-a focus on a particular subject, a study of the work of one artist … thus the winemaker’s study of the indigeneous Greek grape varietals.

Grape Varietal & Region: Assyrtiko “Ahh-Seer-Tee- Koh” is a minerally, dry white wine originally grown in the volcanic soil on the Greek island of Santorini,
but now grown throughout Greece including in Peloponnisos. Nemea is Greece’s largest wine appellation. The varietal’s character ranges from classic dry to a fruitier, softer style with Gaia being one of the pioneers of the modern Greek wine revolution, making cutting edge wines in both Nemea and Santorini.

Assyrtiko by Gaia Wild Ferment 2016

Descriptions:

Santorini PDO (Protected Designation of Origin), Greece was formed by a volcanic eruption, creating a crescent of land around a deep central lagoon, known as caldera. The stunning landscape draws hoardes of tourists for the sunsets, but the viticulture is also extraordinary.

Vines are trained round, in a basket shape, allowing the grapes to hang down in the centre, protected from the scorching sun and fierce winds by the canopy of leaves. Mineral rich volcanic soil are disease-free with no need to spray.

Gaia’s Assyrtiko Wild Ferment is produced by letting a combination of small 1,000 litre Inox tanks and 225 litre French barriques ferment on its own using native yeasts. Because of the unpredictability of using wild yeast, the vinification will occur differently in each tank or barrel. The winemaker then chooses only the best from each tank and barrel for the final blend, creating a wine that allows Assyrtiko to reach its full potential and level of enjoyment.
