Costers del Priorat’s flagship wine. Pissarres is derived from “pizarra,” which is “slate” in  Spanish. The wine is a blend of organically-farmed grapes. A blend of 60% Samsó (Carignan) and 40% Garnacha from vineyards planted in1934 on red llicorella (decomposed slate), using the traditional bush vine pruning technique and hand-harvesting. The wine spontaneously fer-ments with indigenous yeasts in 3,000 and 5,000L stainless steel tanks with a small part in cement vats. The different varieties in the blend are vinified separately to allow each to express itself fully. Aging occurs for 12 months in French oak barrels of 225 and 500L. Part of the barrels are new, and some are two years old. Malolactic fermentation occurs spontaneously.
